Today is your first immersion into the tranquil charm of Ninh Binh. The morning begins with a scenic drive across diverse landscapes – rice paddies, limestone formations, and traditional villages – each contributing to the unique allure of this area. Following a tasty Vietnamese lunch, get on the saddle for a leisurely bike ride to discover the Tam Coc region, also known as 'the three lagoons'. The biking is flat and gentle, and will take you along the waterways, where you'll step onto a traditional Sampan boat. These flat-bottomed wooden vessels are ingrained in the local culture, crafted especially for navigating the calm, shallow waters. Drift through caves and rice paddies, taking in the colossal rock formations amidst the serene aquatic landscape.

Begin your day by catching the sunrise at Mua Cave. After climbing 486 stone steps, you'll be surrounded by the incredible scenery of the river, rice fields, and mountains, which are protected and taken care of by the local people. The climb to Hang Mua is steep and can be slippery during or after rain, but once you get to the top you'll see that this is one of the most impressive viewpoints of the UNESCO-listed Trang An Landscape Complex. Next, you’ll drive to Van Long Nature Reserve, where you will set off by bike to discover one of the most beautiful regions in Vietnam. Bike through changing landscapes over flat terrain, before stopping to be welcomed by a local family to enjoy a delicious lunch of local specialties in their home. This is a true opportunity to experience the traditional way of life in this part of Vietnam. After lunch, return to the hotel to unwind by the pool and freshen up in preparation for the evening's adventure – an overnight train journey to Da Nang. You'll board the train at 9:39 PM and be directed to your sleeper cabin, which has four bunk beds, clean linens, and enough space to store your luggage. Enjoy the changing landscapes and don’t forget to pack a deck of cards or a good book for the journey. You'll arrive in Da Nang at 11:25 AM the following morning, ready to discover the beauty of Hoi An.
Day 7

This afternoon you’ll launch your kayak and paddle along the coco palm forest and local villages up to Lantern Town. Connect with nature, immerse yourself in life on the river and enjoy amazing landscapes as you paddle into the sunset. Hoi An is particularly famous for its lanterns and in the evenings, the town comes alive with thousands of colorful lanterns illuminating the streets and reflecting in the Thu Bon River, creating a magical atmosphere. Stop to unwind at a cozy local cafe and see evening life unfold in Hoi An.

Biking, culture, and culinary delights in Hoi An

Today, get to know Hoi An by bike. Kickstart your morning with a scenic ride, pedaling across the picturesque Cam Kim Bridge to the opposite side of the Thu Bon River. Explore the cultural tapestry of the area with a visit to an ancestral house, which offers insights into the genealogy of a traditional Vietnamese family. Your journey continues through lush green landscapes adorned with rice fields, areca nut trees, and bamboo. A visit to a local family provides a firsthand look at the art of weaving sedge mats, before stopping to visit another local house for fresh fruit and tea. Cruise back to the Old Town and meander along narrow streets, making your way to Tra Que Village. Pay a visit to a local host, who will serve a Vietnamese lunch using freshly harvested vegetables and herbs. After indulging in a satisfying meal, unwind with a well-deserved foot massage in a cozy space. Cycle back to Hoi An to stow away the bike – you can spend the rest of the day continuing your exploration of the old town independently, or perhaps relax at the beach.

After lunch at the lodge, set off on a boat trip and visit Cai Be market to see traders selling their wares, local pagodas, and perhaps sample some coconut candy or traditional cake. FAQs
What should I do about drinking water?
Tap water in Vietnam is not safe to drink; clean drinking water will be provided. Please pack your own reusable bottle, it will be well used. Water bottles with built-in filters are becoming increasingly popular for travelers to use in countries without clean tap water. Please see our guide to the best water filters for adventurers if you wish to bring your own filtration bottle on this trip.
What should I know about domestic flights?
Your trip includes a regional flight from Da Nang to Ho Chi Minh City. You’ll be allowed to travel with 15 lbs of carry-on luggage and 51 lbs of checked luggage per person.
Flights are booked once the trip reaches minimum group numbers, so please submit your passport details as soon as possible to secure your seat.
Your name must be provided exactly as it appears on your passport. If incorrect details are submitted and the flight is booked, tickets are non-refundable and non-changeable. Any amendments will be subject to airline availability and rebooking fees, which will need to be covered by you.
What kind of kayaks are used on this trip?
There are plenty of options when it comes to the kayaks available on this adventure. Whether you're a solo adventurer or prefer to share the paddling experience, you will be able to use either single or double kayaks. You can also choose from comfortable sit-in kayaks and versatile sit-on kayaks. Each kayak has a maximum weight capacity of 330 lbs.
Can my dietary requirements be catered for on this adventure?
At Much Better Adventures, we work hard to accommodate dietary requirements and allergies so your trip is safe, inclusive and enjoyable. That said, options can vary by country, location and accommodation, and in some places options may be limited or unavailable. The information below has been provided by your host so you’re fully informed about what will be possible on your trip depending on your individual requirements. This information should be read carefully prior to your trip to ensure that you are adequately prepared for the situation ‘on the ground’.
Once you have booked on your trip, please fill out your passenger information form asap with any dietary requirements. Once you complete your passenger information, your dietary needs and any allergies are automatically shared with your host and, in turn, your guide. Please submit this as early as possible so they can plan accordingly and deliver the best experience. Please also remind your guide about your dietary requirements upon arrival, as mentioning these in person allows your guide to comprehend individual preferences and limitations as soon as you arrive.
BACKGROUND Vietnamese cuisine is shaped by a long agricultural history centred on rice cultivation, a tropical climate that yields an abundance of fresh herbs, vegetables and seafood, and cultural influences from China, France and the country's many distinct ethnic groups. Meals are typically light, fresh and aromatic, built around rice, noodles, broth-based soups and a balance of raw and cooked ingredients, with strong regional variation between north, central and south. Vegetarians can generally find suitable options, particularly in areas with a Buddhist influence where plant-based cooking is well established, though fish sauce and seafood-based stocks are used widely and may not always be visible in otherwise vegetable-heavy dishes. Travellers with strict dietary requirements should communicate needs carefully, and guides can be essential in helping to identify safe options and avoid hidden ingredients.
SPECIAL DIETS
Vegetarian -Vegetarian diets can be catered for on this trip, provided that your host is made aware in advance.
How Meals Work: Vietnamese dining is traditionally a communal, sharing-based experience. While we strive to provide a seamless dining experience, please keep the following in mind:
- Vietnamese cuisine offers a variety of delicious vegetarian options such as salad with sweet and sour dressing; Braised eggplant; Seasonal stir-fried vegetables; Vegetarian spring rolls; Vegetarian curry with potatoes and carrots; Fried silken tofu, merlettes, steamed rice, bread, so are always of good quality and variety.
- Customised Dishes: We will prepare dedicated plant-based dishes for you. Please note that while these are intended for you, it is common for meat-eating companions to share these vegetable dishes as part of the communal meal.
- Protein Sources: Your protein will primarily consist of tofu and eggs. Because we prioritise fresh, local ingredients over processed meat substitutes, you may find the protein options to be somewhat repetitive throughout the trip.
- Dairy & Specialty Items: Dairy products (like cheese or fresh milk) are not a staple of traditional Vietnamese cuisine and are often unavailable in local eateries.
Vegan -Vegan diets can be catered for on this trip, provided that your host is made aware in advance. Vietnamese cuisine offers a variety of delicious vegetarian options such as salad with sweet and sour dressing; Braised eggplant; Seasonal stir-fried vegetables; Vegetarian spring rolls; Vegetarian curry with potatoes and carrots. Restaurants are generally happy to adapt dishes where possible; However, vegan-specific options are more limited than vegetarian ones, so meal options in certain locations can be basic, repetitive and lacking in protein. Your protein will be almost exclusively derived from tofu. As with all our meals, dishes are served communally. We will provide dedicated vegan plates, but the variety will be significantly narrower than the standard menu.
What to expect: Hidden Ingredients: Traditional Vietnamese cooking relies heavily on fish sauce and shrimp paste. While we will instruct our local cooks to omit these, the flavour profile of vegan meals may be simpler than standard dishes.
Please do consider bringing your favourite snacks or food supplements from home to ensure that you always have enough fuel for your adventure.
Kosher -Fully certified Kosher kitchens and supervision are rare and usually cannot be guaranteed unless expressly confirmed in advance by your host. Vegetarian or vegan options can often be the most reliable alternative if this is acceptable to you. Please read the related sections above.
Halal -Certified Halal supply varies by destination and may not always be possible. Vegetarian or vegan options can often be the most reliable alternative if this is acceptable to you. Please read the related sections above
INTOLERANCES
Gluten Free -Gluten-free diets can be catered for on this trip, provided that your host is made aware in advance. Your meals will primarily consist of rice, rice noodles, seasonal vegetables, and potatoes. Because of the local supply chain, you should expect these ingredients to be highly repetitive throughout the trip. That said, most standard meals already include several options without gluten, even without special preparation.
Lactose Free -Lactose-free diets can be catered for on this trip, provided that your host is made aware in advance. Many traditional dishes are naturally lactose-free or can easily be prepared without dairy. Please do consider bringing your favourite snacks or food supplements from home to ensure that you always have enough fuel for your adventure.
ALLERGIES
Our host has confirmed that provision for certain mild and severe or life threatening food allergies on this trip may be unreliable. Please get in touch with our Customer Experience team prior to booking to discuss whether your requirements can be accommodated safely on this trip.
This will allow us to carefully consider the sensitivity and severity of your allergy, the available provision on the trip and the accessibility of medical care should a reaction occur. Your safety is always our top priority. Please note that when travelling overseas, local ingredients, food preparation methods and labelling standards may vary, particularly in remote areas. It is also worth noting that any allergies may result in more limited options and repetitive provision in some areas. Whilst your guide will help communicate dietary requirements where possible, customers remain responsible for managing their own allergies during the trip. Although our cuisine mainly uses fresh ingredients and processed food is not traditionally common, we do rely heavily on fish sauce and shrimp paste in many dishes. In some cases, there may also be hidden ingredients in dressings or sauces that local suppliers may not be fully aware of.
Meals are often prepared by small local restaurants and family-run kitchens. While this is an important part of the cultural experience, it also means that ingredient control and food preparation standards can sometimes be more limited compared to international standards.

What's the weather like?
Vietnam is a great destination year-round and has three distinct climate regions. In the north, winters (November to March) are cool and dry, with temperatures ranging from 50°F to 68°F, while summers (April to October) are hot and humid, with temperatures between 77°F and 95°F. Central Vietnam has a varied climate: the north-central coast has a tropical monsoon climate with a wet season from September to February and a dry season from March to August. The south-central coast experiences a dry season from January to September and a wet season from October to December. Southern Vietnam has a dry season (November to April) characterized by heat and low rainfall, with temperatures between 77°F and 95°F, and a rainy season (May to October) with higher humidity. It's important to note local variations and the possibility of typhoons, especially during the wet season. Check local forecasts for accurate info before your trip.
What's the carbon footprint for this trip?
We partner with the World Land Trust to ensure this trip achieves Net-Zero emissions. We also support their Buy an Acre program, helping local communities to buy and protect natural habitats in perpetuity.
What's the number?
It works out on average at 369kg of CO2 emissions per person, including all local transport, accommodation, food, activities, guides, staff and office operations.
The only thing it doesn’t include right now is flights and travel to the destination. We do make an overall estimate across all our customers separately, but as we don’t book flights, have customers from all corners of the world, and no way of reliably knowing their travel plans, we simply can’t include an individual number in the figure on display here. We’ve got a goal to fix that, so that when you book, there is a way to measure and mitigate the carbon emitted by your flight too.
But what does the number mean?
Yep, hard to picture eh? To give you an idea:
- Driving 1000 miles/1609km would be approximately 281kg of CO2 in an average car (or 140.5kg per person, if there were two of you in it).
- A return economy class flight between London and New York would be approximately 1619kg (1.66 tonnes) per person.
- 10 trees in a temperate forest are estimated to remove approximately 250kg of CO2 from the air in a period of 5-10 years.
What are we doing about it?
Our trips are relatively low-carbon by design, and we're working with all our hosts to develop long term carbon reduction plans. We partner with the World Land Trust to ensure this trip achieves Net-Zero emissions. We also support their Buy an Acre programme, helping local communities to buy and protect natural habitats in perpetuity, ensuring the protection of the reserve and its wildlife.
Want to know more?
Amazingly, no international travel company has ever publicly published their carbon measurements before, as far as we know. We believe that must change, quickly. So we’re openly sharing the method we used in the hope that other companies will be able to more easily follow suit and build on what we've done so far. You'll find it all here.
